I'm making chicken tetrazzini for dinner and Brian refuses to call it anything but chicken pterodactyl. You'd think when I left my classroom (filled with 12 and 13 year olds) my conversations would be a bit more mature- not so much. ;)
Anyway, since there's really nothing exciting to blog about as of late, I'll share this recipe with you kind people.
Chicken Tetrazzini (or Pterodactyl)
3 T. butter
1 onion, chopped
1/4 c. celery, chopped
2 c. cooked chicken, diced
10-3/4 oz. can of cream of mushroom soup
2-1/2 c. chicken broth
1 t. lemon juice
1/4 t. pepper
1/8 t. nutmeg
6 oz. of spaghetti, uncooked and coursely broken
4 oz. can of sliced mushrooms, drained
Heat butter in a large pot over medium heat. Saute onion and celery in butter until tender; arrange chicken over the top. Stir in soup, broth, lemon juice, pepper and nutmeg; add spaghetti. Bring to a boil; reduce heat and simmer for 15 minutes or until spaghetti is tender. Add mushrooms; simmer until mushrooms are heated through. Serves 8.
Important notes: I am totally aware that this is not the most healthy dinner in the world. I am also totally aware that sometimes we all just need simple, comfort food; this completely fits the bill. Also, because I am southern and firmly believe that all food is better when covered in cheese and baked, I... um... put this in a casserole dish, cover it in cheese, and bake it. Amen. Feel free to omit whatever you or your family will not eat. Brian won't eat celery or mushrooms, so I leave that out. Serve with veggies to make yourself feel better. :)
